Ingredients
1.5 lbs Ground Beef (80/20 ratio)
1 tsp Kosher Salt
0.5 tsp Freshly ground black pepper
4 Brioche Buns
4 slices Sharp Cheddar Cheese
4 leaves Iceberg Lettuce
1 large Tomato, thinly sliced
Instructions
Divide the ground beef into four equal 6-ounce portions without overworking the meat.
Shape the portions into patties about one inch wider than the buns.
Create a slight indentation in the center of each patty to prevent puffing during cooking.
Heat a cast-iron skillet over medium-high heat until it begins to smoke slightly.
Season both sides of the patties generously with kosher salt and black pepper.
Place patties in the hot skillet without overcrowding.
Sear for 3 to 4 minutes without moving them to develop a crust.
Flip the patties and immediately add a slice of cheese to each.
Cook for another 3 minutes until internal temperature reaches 160°F.
Toast buns lightly and assemble with lettuce and tomato.
Notes
Keep the meat cold until the very moment it hits the pan to ensure the fat does not render too early. Do not press down on the burgers with a spatula, as this releases precious juices.
